Ingredients
2 Eggplants, sliced into ½ inch thick rounds
4 Cloves of Garlic, sliced thin
4 Fresh Beets, cut into ½ inch squares
Feta Cheese
Olive oil
Salt and Pepper, to taste
Instructions
Brush olive oil over eggplant and garlic, bake at 475 for 30-40 minutes
Toss beets in olive oil and salt & pepper, bake at 475 for 20-25 minutes
Turn both dishes halfway through
Once done, toss beets with feta cheese and serve over eggplant
Enjoy!
